I have a 95 gsxr 750 I'm new to the bike world and I love it so my problem is I just replaced the friction and steel plates and springs and now when I start the bike and pull the clutch in and put it in 1st it jumps and dies any help would be great

Did you replace the clutch parts with original equipment or an after-market kit?

Have you adjusted the cable?
 
It sounds like you may have an extra plate lurking in there from the swap over that is taking up your free space?
I would go thru the entire process again looking for obvious mistakes like too may plates or a bent/warped steel plate somewhere.

#17 & #18 engage each other and work to engage-disengage your clutch.
If you did not realign these properly upon reinstalling the cover, the clutch plates may not be separating far enough to accomplish complete disengagement.
This may be what you are experiencing and why!

How it works is:
1-The clutch lever pulls the cable.
2-The cable pulls the racks arm atop the clutch cover.
3-The pinion rotates via said arm.
4-The pinion pulls the rack via its teeth engaged with the rack.
5-The clutch pressure plate is pulled out and away from the plates via the pinion and disengages the clutch.
6-Not enough travel, not enough disengagement!
Of course...You may have just installed the wrong clutch kit or installed a Barnett clutch kit which are notorious for the problem you describe!
 
Ok...I'll try and nurse you thur this!
1-Back off all the slack for the adjusters at the clutch lever and the the clutch cover.
2-Remove the bolt that secures the arm to the pinion but leave the arm attached to the cable.
3-Remove the arm and move/pull/rotate it back on the spline shaft of the pinion.
4-Retighten the securing bolt on the arm.
5-Readjust the adjusters at both ends until there is about 3/8th of an inch of free play.
6-Any better?
6a-If Yes, Yeaaaaaaaaaa you did it
6b-If No, Boo-Hoo you'll need a shop manual or a shop!
 
Why do I still have a sneaking suspicion there are too many clutch plates in that there clutch basket?
What brand of clutch are you using b.t.w?
Or that like the 1100, one of the OEM components at the back of the stack needs to be removed outright. Not sure if that is the case with Barnett kits for the 750 though.
