I have a 2007 gsxr 600 at a shop, and the head gasket is getting replaced and supposedly it takes about 10 hours to do, I want to know is that true or false

Not true unless they are machining the head and engine. I think it's a 4 hour job per Suzuki shop manual. Go to another shop.
Ps. Your bike is off the age where most motorcycle shops would rather not work on it so you will be given high quotes just to get you to leave and if you accept it they are happy to overcharge you as much as they can. You are probably going to want to look for an older, smaller independent shop to work on it and not a dealership.

welp, if you're paying a shop what $160.00 an hour and it takes him 10 hours to do a head gasket something is way off, this can be done with engine in the bike right?
if I put my head down I could prolly do this in 2.5 hours engine in bike. . any lame shop mechanic should be able to do this in 4..
they want $1600.00 plus parts and tax to do a head gasket on gixxer? RUN!
