I just did a 520 swap on my 600 and I already had an extra set of wheels (for my street tires) and didn’t know if I could just swap my sprocket from my track wheel into my street without actually unbolting it from the hub? Is it bad to use the different cush drive?

I can't see why not, same part number. Easy way to try different gearing, at the track, for different tracks.
Cush drive should be a tight fit in the wheel , a good trick is to cut some, push bike innertube rubber (thin), strips and jam them in, on the outside of the cush drive rubbers, giving a tight fit with no play,(axial) forward or backward when you push the sprocket drum / carrier in. (y)
