I am installing a new head gasket on my 01 1000 and was wondering if it would hurt anything to take the middle part of the gasket out, as well as things to look out for and is there anything I need to do to the gasket after i pull it apart, like any sealant or anything like that. Any info would be great.

The middle gasket has water passage restrictors and one oil passage (going to the cams/CCT) restrictor.
Removing the oiling restrictor shouldn't be a problem as the oil jet(K3) is a much smaller diameter than the
restrictor. If the cylinder is cooled unevenly you could have ring seal issues, but no one has
reported any such problems.

It seems that P B had valve cover oil leaks due to this. He actually tapped the oil line in the head
to restrict the flow back to normal.
You could also cut out the middle oil restrictor part of the gasket and stick it back in-between..

Now what I would worry about is if I have enough piston to head clearance and piston to valve clearance with
the thinner head gasket.
