Looking at the exhaust side of the motor the heads appear to be shimmed , assuming this isn’t “factory” so with that being the case, why the shims? aftermarket pistons perhaps? Don’t mind the oily mess, will be cleaning up and fixing gasket issues while the motor is out.

That's just the head gasket, it's multi-layered.
Those big oil tubes drip oil when the O-rings fail, that's probably where most of the goop is coming from.

Good to know on the head gasket, not sure why I thought it didn’t look factory, and yes, oil tubes are 100% the issue, previous owner had tried to seal them with a two part epoxy (face palm), luckily the oil made it all come off very easy, new Suzuki rubber O rings on order along with all the rest of the top end gaskets.
