As the title suggests it, the gauge cluster keeps resetting each time the key is removed.
Every time I start the bike it shows the current mileage (not the last option it was showing) and it also resets the time to 1:00.
The bile starts fine so the battery can't be bad.
Any idea where I should look first?

The cluster gets power on two leads. O/G is switched but R/Bl is always hot (it maintains the time and presets). It sounds like the R/Bl may be dead. I'm not familiar with the details of your bike but the places to check are the connector into the back of the cluster or, more likely, the big connector inside the left front fairing.

With the ignition off try disconnecting the battery, waiting ten seconds, and reconnecting. The tach should sweep like it does when you turn the ignition on (at least it does so on my K6 1000). The R/Bl isn't getting power if it doesn't sweep.

P.S. If the lights were also acting up I'd consider a bad ground, B/W. But that doesn't appear to be your problem.

Thanks for the reply. I will check it out as soon as I have time. Hopefully it will solve the issue. Will report back of the outcome when done it

The mileage resides in different memory than the other settings (current time, odometers, etc.), so that only the latter need power to be retained. Power can be lost either because the +12V lead, or the ground is broken.

Did you measure the voltage on the R/Bl lead at the cluster connector and did you see the tach sweep?

I didn't have time to measure it yet.
I park the bike on the road and during weekdays when I leave the house and by the time I get home it's dark so I can only do bits during break unfortunately.
I didn't see the tach sweeping. So that suggests the R/Bl is dead right?
