So if I want to get all new fairings to change the look of my bike. I have to get the gas tank painted to fit the fairings right?

And the guy whom had the bike before me laid it down so there's a dent on the gas tank, I tried a couple dent places but they don't do that, any ideas how to get it out?

Only chance you have with that is to take the pump out to do it yourself. And knock it out from inside. Surprised no one can do it for you, in the uk many places offer this service.

take it to a metal fabricator or a better body shop

Find someone with one of these.

You can get a new set of aftermarket fairings that also supply the 'Gas Tank cover'. It'll save you the headache of having to do any bodywork on the tank to remove the dents.
