I had my rims powder coated and bought new wheel bearings. Per the original Suzuki parts pic the rear wheel should have 1 seal and 3 bearings. The kits I find online have either 3 seals or 2 seals. Should I be installing the extra seals? I can provide pictures if needed. Thank you.

As I understand the K1/K2 service manual, the OEM bearings are sealed on one side. So the single seal is for the exposed side of the sprocket carrier bearing. If your new bearings are unsealed, it is essential that the exposed sides have seals. Otherwise seals are prudent but things won't immediately go to hell without them. I gather that the bearing recesses in the wheels are deep enough to accommodate seals. I hope you're aware that the bearings need to be properly installed with the Suzuki tool or something that functions the same way. This is critical when the left side bearing is installed.
