I'm not convinced the 1100's are worth that sort of money over here yet. Someone had a pair of 11's for sale on eBay (Aus) a few weeks back for $15k each.... One was a blue/white 86 G with only 20,000 kms and the other a 87 H - both really nice, but $15k??

Yes, that is in fact, a stock (factory) paint scheme.
In 1987, Suzuki produced a "jubilee" (black/gold decals) 750cc model for their market in Japan, and later followed up by doing the same colour scheme to the 1100cc model in 1988.
Here are some images I've taken from Suzuki advertisements, magazine articles.
The first image is a series of '88 1100 colour schemes, which included the "jubilee" black/gold. The 2nd image is of the '87 750 offering of the same colour, followed by the 3rd image showing the scheme offered on all GSX-R models from 1987 - 250cc, 400cc, and 750cc.
Hey news flash I spent $ 9000 dollars on parts paint motor on my 87-1100 not including the org. purchase price for on old pce. of junk But now I have a brand new 1100 I know that it may not be worth my restoration costs but it is almost impossible to find anything good for under $6000 dollars and all these old clean bikes need a good look over with many parts worn our in need of replacement or rebuild. I am pretty sure that there are plenty of people on this sight who have sunk big bucks into these bikes. what would you pay for a brand new 1987 gsxr-1100??? after a year and a half worth of work $12000 dollars does not seem too far a reach. I dont see any complete restorations for sale.with The effort and cost that goes into these projects people are not going to give them away. Sonner or later if you want a perfect org machine you are going to have to pay for it.
I probably haven't spent quite that sum to restore mine, but have invested 100's of hours getting it back to showroom. Even though I still need one part to finish it perfectly, only a few would pick it as anything other than nut&bolt perfect.
Like GC300 says, I know the condition of every nut & bolt on it, inside and out, so it's may only be valued at a few $K, but it's worth a lot more to me.

Depending on your level of expertise. And the level of restoration, or resto/mod as it may be, that you are after. It is easy to sink $10,000 into one of these old bikes, and we all know this to be true. And that figure is just going to go up, as parts get harder to find, and people get greedy. And I completely agree with GG300. But I also don't think that a $9,000 bike should need much if any work either.
It takes a certain appreciation for minimalistic design. Lots of colour bamboozles folks into believing "more" has gone into it. Less colour makes some folks uneasy, that not enough time, thought (or even money) went into the production. Take away the colour, and you're left with the same engine, the same frame, and the same fairings. If you don't like it without colour, then why would you like it with colour? There's nothing cheap about the bike before the colour was sprayed on, so ask yourself ... why do I actually think that the colour black is cheap. The real answer ... it's not. It's a colour that you don't prefer, not cheap ... but maybe it's too subtle for you. Everyone likes a red hotrod, so why do so many folks go with a black car instead?
