You looking for tracks or organizations? There are several tracks:
Talledega Grand Prix Raceway
North Florida Motorsports Park
Memphis Motorsports Park
Carolina Motorsports Park
Road Atlanta
Roebling Road Raceway

However the trick is finding organizations that have track days. Here are the few that I know of:

North Florida hosts its own every other weekend

VIR is close to you. You can run in there trackdays on saturday. You can get lincensed and ride a couple sessions friday and eight sessions on saturday for 300 bucks. They also have a sportbike entusist package also. Its the same package but you cannot race on sunday. I had some friends who have been riding up all the time. I am going to get lincensed next time.
