Let me try this.
EFI, is controlled by a computer that knows when to inject gas in the the combustion chamber when the cylinder is TDC. All the cylinders have different firing orders and also the right amount of air is mixed with the fuel to get a better detonation. This is more efficiently than a carb, where all the combustion chambers are added with gas at the same time.
Don't quote me on this. This is how I understand it works and I'm sure someone will have a more detailed explanation.

F.I. stands for Fuel Injection
E.F.I. stands for Electronic Fuel Injection
Same thing, just a slightly different name.

with a fuel injected bike you dont need to rejet the bike for diff. altitudes, with carbs you do. I used to have a carbed bike and now a fuel injected one, I will never go back.

Both the carbs and throttle bodies/fuel injectors are considered fuel mixers. Carbs rely on engine vacuum, throttle position and jet sizes/ rods/air bleeds, etc... to meter how much fuel goes into the combustion chamber while the FI system has a computer that tells the fuel injectors how much fuel to spray into the combustion chamber.
Bottom line is that:
1. carbs use mechanical methods to mix and meter fuel and air.
2.FI systems use an oxygen sensor or programmable fuel map to mix and meter the fuel.

Go here, (http://www.howstuffworks.com/) and search for carburetor and fuel injection.
All explained in layman's terms too. images/icons/smile.gif
