I did a brief search so if this has been covered please share the link and I fail at the internets so -1 for me.
I am trying to remove the HL switch from my trackbike (08 750) and other than the clutch wire it all seems rather straight forward. How do I remove/bypass the connection for the clutch wire so the bike will start?

You don't. Leaving it on is the easiest solution by far and honestly, that tiny bit of weight won't make a difference.
The thing with the clutch switch is that it has two functions, the second of which isn't as obvious. When you pull the clutch in and engage the switch, the starter can be operated. However, when the switch is engaged, the ECU also runs Neutral Map which has less power to make shifts smoother and prevent over-revving. This means that if you just short out the clutch switch to be able to remove it, the bike will be running Neutral Map all the time - with about 20% less power...
This feature was introduced with the '04 600/750 without any mention from Suzuki - which led to countless of hours of frustration for racers and tuners who couldn't figure out why new bikes all of a sudden were way down on power after track prepping.
Of course you could add a switch to press when starting but that's really pointless. Just leave the original housing on there.
