You can, but it would be a very bad idea. The ECU would assume it's constantly operating the motor without load and run the engine accordingly (use different maps, perhaps a lower rev limiter, etc.). You don't want that when you're not in neutral, or have the clutch pulled in. Do a search for "neutral switch" for more details; there are plenty of threads describing the effects.
